Chef Vasilka Ivanova has been taking the guests on a culinary trip. At first, she has been started timidly. Logically because it was all unknown to her - recipes, spices, cooking techniques. Assurance comes when she realizes she will not be alone in this challenge. The Mexican Luis Montero de Palma stands beside her. He has been in Bulgarian for more than 30 years. He is married to a Bulgarian woman. Ana Montero is an artist who studied the secret and mystical traces of Mexican civilizations and especially the Mayans. She lived in Mexico where she managed to make direct contact with this so famous and interesting culture of the Yucatan Peninsula. Her paintings complement the authentic atmosphere of the Mexican restaurant. The newest dish in its menu is Chicken "Nopalitos" - wrapped chicken breasts in cactus strips with Cheddar cheese and hot chocolate sauce.

Chicken breasts are marinated with the Mexican spice "Fajita" then stewed in butter in a pan with cactus strips. The meat is wrapped in cactus strips with Cheddar cheese placed between them. It bakes for 8 minutes with Cheddar cheese on top. Serve with hot and chili chocolate sauce, covered with sesame. If you love spicy and well spiced meals, you will definitely like Mexican cuisine. You should also try the deserts.
