A five-course menu with a delicate combination of French flavours and techniques, and accents of Eastern cuisine, will welcome the guests of the 5-star Maritim Hotel Paradise Blue in Albena on New Year's Eve. Chefs Zhivko Stoyanov and Hristo Uzunov's original selection begins with a themed salad of tomatoes, homemade “Kyopolou”, smoked sheep's cheese mousse, pickled red onion, crispy ham from the region of Elena in the Balkan mountain, freshly roasted walnuts and a sprinkling of dehydrated olives with parsley pesto. The starter includes a traditional foie gras terrine marinated with the iconic Grand Marnier liqueur, laid on toasted cobbler, poached pear with anise flavour and sour cherry puree to balance the flavours. A combination of pork and chicken is the highlight of the main course, with filet mignon and croquette topped with pea puree, Arabic hummus with Brunoise vegetables and gravy with prunes. A white chocolate velour mousse with raspberries and champagne, on an almond crumble and Patissier cream with cardamom and bourbon vanilla will put the sweet finishing touch on the evening. Guests will also be treated to an after-dinner interpretation of a homemade Bulgarian “banitsa” bakery, as well as a selection of alcoholic beverages produced by the holiday village gardens.
The menu of chef Ivan Georgiev in the other 5-star hotel in the complex Flamingo Grand is also 5 courses. The culinary experience on New Year's Eve will begin with a salad of pink tomatoes, frisee and valerian, with a robe of herbed vinaigrette, grilled zucchini, roasted pepper with Philadelphia cheese, quail eggs and a beetroot olive sand. A foie gras panna cotta, with red grape confit and couscous chips is provided for starters. A main course of king cutlet with porcini mushrooms, bacon and French cheeses, accompanied by potato tart, sundried tomatoes, root vegetables and Bordeaux sauce, is the highlight of the selection. Before dessert, guests will be surprised with a selection of Bulgarian cheeses and appetisers, while the sweet side of the menu includes a temptation of mascarpone and raspberries, pistachio, brownie mousse, with a fluffy snow of pure Belgian chocolate.
Early bookings for the festive season with a 10% discount are accepted at Maritim Hotel Paradise Blue until 30 November, and the Flamingo Grand Hotel & SPA is already fully booked. Additional compliments for guests include complimentary electric car charging during their stay and access to the hotels SPA and Wellness Centres. The musical mood will be taken care of by Stefan Valdobrev and Obichainite zapodozreny Band, Sylvia and Teddy Katsarovi, the folk singers Dinevi Sisters and the Latin-jazz band Free4All.
